Pork Souvlaki with Horiatiki Salad

I needed a new addition to our weekend rotation and came up with Pork Souvlaki. I grew up eating this but haven't made it until today. I texted my brother to tell him I was making Souvlaki. Pork he asked? Is there any other kind?
I started with a video recipe from another Greek named Ken. This guy is a character!

There's really not too much to it. Take olive oil, lemon juice, greek oregano, salt, and pepper and make a marinade. Slice up pork loin into 1" cubes, put in the marinade. Put the cubes on to soaked wooden skewers, cook to 135F. Put that on a pita with some tzatziki, some tomatoes, and you are good to go.
The salad is also simple and delicious. Here's the recipe for the salad.

I have made the same with chicken. Looks excellent, and I love the salad.Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

Listen, the pork souvlaki is the OG of souvlaki. If you don't say any kind of meat, and you just order a souvlaki, it should be pork. I feel I can speak somewhat authoritatively on this subject.Plymouth, MN
