Sorta OT - A hard-working short-order cook

I believe this guy is Japanese (I think both the audio and subtitles are) but it looked like he cooked a few chinese-looking dishes too. Small restaurant, looked like 4 tables and maybe ten counter chairs.
The cook was a machine!! Had one of those cooktops where water was flowing over, to keep up with his mess, and he had pots of hot oil, cleansing oil, broths, hot sauce, flammable stuff, whipped eggs and who knows what else, standing by. Also a perforated wok, where he could quickly fry various veggies "off-line", before adding them to the main dish. His "wok burner" was definitely high-temp, but not like the afterburner stoves I've seen in other videos.
It did get a bit repetitious towards the end, but tonight the only alternative was a republican debate, so I kept watching hot stir-frys. And I learned a couple things. Enjoy.
