    That is bringing it home across the board.  Any of those opening photos belong in a magazine shoot!  Congrats.

    We have spent 50 years perfecting the Caesar salad.  You need a nice wood bowl
    crush an anchovie with a fork and a pinch of salt to make a paste. Add about 2 or 3 cloves of freshly chopped garlic and continue with the fork to make a paste. 
    Add 1 egg yolk, a splash of Worcestershire, a splash of tobasco , a bit of brown mustard and a bit of Dijon mustard.  Mix together with a wooden spoon and then very slowly add light olive oil while stirring until it emulsifies .  Continue to add the oil (keep stirring) until you have the amount of dressing you want.  Add chopped romaine (we chill it in ice water and spin dry just before preparing). Bacon bits and croutons. Topped with FRESH parmigiana cheese -  enjoy and play around with the quantities. - a squeeze of fresh lemon brightens it a bit as well. -  good luck and I’m here if you have questions
