The Stall - 2 8lb boneless pork butts

As the title suggests. I have been in the stall what seems like all day. 171 for at least 2 hours. Butts went on at 7am. It is now 7:50 pm and the internal temp is only 173. I feel like we are going to have jerky when it is all said and done. Added a Texas crutch at 7pm.

    Nope regarding jerky- Missing critical piece of info is your calibrated (key word) dome temperature.  But pork butts can spend several hours in the stall (and the meat temp can even drop during that event).  Given where you are and the time as long as you declare victory when they probe smooth.  Likely in the 200-203*F window. 
    When they finish (in a few hours) I would then pull and reheat tomorrow. 
    You will be rewarded just not tonight.  FWIW-
