Greece: tips and advice

I'm headed to Greece in September. I'll be in county 9/14-9/28 and I'm bringing the family, a teenager and a potty trained toddler. We'll be in Crete, Santorini, and Athens.
I'm looking for any and all advice. We have lodging booked but food, must see or must avoid, fun and cool things to do, etc. Other family is going but outside of a few things we're not connected at the hip. We'll have a meal together every day, we're staying at the same place, but everyone agrees we can't be together 24/7. But it does mean I'll have the occasional babysitting
We have a cooking class, a charter fishing trip, and a couple vineyards booked. Not looking to book every day, certainly want to have some things to look forward but to also have freedom to explore and see where th the road takes us

Souvlaki for a quick lunch with Retsina if you want to try a different wine. You can try Ouzo if you like anise flavor but some of it has pretty high alcohol content. My experiences are decades old but I remember going into small restaurants and just pointing at what was in the display cases to make selections. Some things I recognized and others were unknown but I never chose anything that I didn't enjoy.
