How do I BGE-ify this chicken tinga tacos recipe? How can I get some smoke or something into it?

Hi folks, if I can quickly direct you to this recipe, Easy One-Pot Chicken Tinga (Spicy Mexican Shredded Chicken) Recipe (seriouseats.com) , we already make a few personal adjustments on it and are not looking to drastically change anything up so I'm not asking for a new recipe - but instead looking for how I can do some of this on the BGE instead - maybe a way to get some extra flavor into them somehow?

I was thinking maybe something like a low profile cast iron skillet on the grill on top of direct heat with a smoke chunk going below it, maybe take the finished shredded meat and add it to the skillet to crisp it up or something at the last minute?  and do the reheating of the shells maybe, is there a technique for this?

I'm basically doing this recipe for a small neighborhood gathering where we are supposed to be outside as much as possible, so I want to know how I can integrate my BGE into something like this where it calls for the cooking to be in a dutch oven or whatever

I hope this isn't too confusing, but it makes sense in my mind lmao

    I'd just cook the chicken, tomatoes, tomatillos, onion and garlic on the Egg; when soft/done bring them back into the kitchen and finish cooking in a pot per the recipe.  I do this often with chili, beef stew, etc.

    Do the whole thing in a Dutch oven on the BGE. You will have plently of time and surface area to pick up some smoke

    I like that idea!  I was wondering about that as well.  Then was also wondering if it would somehow ruin the red finish on the enamel though

    make sure you use the enameled dutch indirect.  it will get some black smoke residue, soap it down over night before cleaning or clean it right away with alot of elbow grease ;)

    If you're concerned about keeping the exterior of your pot clean why not just cover the pot exterior with foil?

  • For next time, you could spray some vegetable spray (Pam) on the outside of your cast iron DO. Easy peasy cleanup.
    Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!
