Independence Day Shoulder/Butt (Pic Heavy)

It’s been a long time since my last post so I thought I would share my Independence Day smoke.
Nothing says 4th of July in Georgia like a 10lbs pork shoulder!
Things went very smoothly today and the Eggs cooperated flawlessly…… which is not always the case….. especially in very humid weather.
The almost 12 hour smoke concluded with a product that I was very happy with!

I lit my fire early and got the shoulder on before 6am in anticipation of a long smoke……
(I also did a whole chicken today, but I will post that separately)

I used a very mild charcoal made of mostly eucalyptus wood and layered in some peach chunks…..
Shoulder before the rub…..it was a beautiful cut of meat.
I rubbed it with Runnin’ Wild Peach and Pecan seasoning and a touch of fresh ground coffee…..
Shoulder rubbed and ready for the smoker…..
Fire temp dialed in at 250 degrees……
Settled in for a long smoke…..
Here it is at the 5/6 hour mark stalled in the 160’s
At almost 12 hours the meat hit 195 degrees which is my pull temp…..
Those who used to read my old posts know that I am a wine geek and always list what we are drinking…..today, we went all American with a 2016 Sine Qua~Non Syrah (this was a monster wine!) and a 2012 Evening Land Pinot Noir that was lighter and more balanced based on what our guests preferred.

Beautiful cook right there. Sweet bark.Something to consider going forward-I rotate the dome thermo such that my desired cook temp is at 12 o'clock. That way a casual glance let's me know the trend of the cook temp. FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.
