Blood rare
The first time I ordered a steak blood rare was in Fort Worth, Texas. Seared on the outside with a cold/cool center, so tender and cut like butter. Since I'm craving and at camp alone...

I've seen reference to 'Pittsburgh rare' - not sure if that's just a fancy name for rare steak, or a specific method. Either way, charred to give a crips bark and red centre is my choice too.

I have been cooking my steaks (especially tenderloins) to 'black and blue' for a while. I like the contrast between the soft juicy interior and the dark and crunchy exterior.I always considered 'Pittsburgh Rare' to by the same as 'black and blue' but I could be wrong. 'Blood rare' is not a term that I had heard before now but it seems in the same vein as the former.
