3-2-1 Ribs Question

Hello Everyone,

If my plan is to transport or eat the ribs at a later that evening, should I complete the last hour (no foil and sauce) and then back in the foil until eaten or transported to another location?

  • I usually cook as I normal do.  I go 2-1-1/2 for St. Louis. then I wrap them and take them to friends house.  Come our perfect.

    You have two real options in my opinion.
    Smoke them ... I go 2.5h.
    Wrap them ... I go 1.5h
    Take them to friends (I wouldn't bother towel wrapping them, just leave them in the sealed foil ... you don't need them to continue cooking, so the foil will allow them to cool a bit).
    Then open foil and glaze at buddy's place for 30 min.

    Or ... take them after you smoke them, and wrap them up, but do the wrap time in buddy's oven (1.5h) and then open foil and glaze for 30 min (I normally apply glaze 3 times, once every 10 min).
