Mary's air chilled heirloom chicken spatchcocked and dry brining in the refrigerator right now getting ready for dinner tomorrow night. I feel like I'm in a bit of a rut on my spatchcock chickens lately and could use some inspiration for a new variation.

Today was oddly my first time breaking down a whole raw chicken. I'm currently making a stock with the carcass, legs, and wings which are not needed for the kebabs.
