Working On My Brisket Game

I cook briskets frequently and I am always working on ways to up my game.  The last one I did added a long oven rest at 150 degrees.  This time I added the latest craze (Goldee’s BBQ method) and placed tallow under the brisket and drizzled tallow over the top of the paper after wrapping and placing it into the oven for the rest.  It was incrementally better but certainly not a game changer.  The long oven rest does help considerably.

  • @Photo Egg I have a buddy that is a Japanese knife expert.  He has a wall full of custom Japanese knives ($1,000+) and has the expertise and tools to sharpen them to perfection.  He uses a jewelers loop to inspect the edges and does the final strop on two different grades of leather.  When I trim a brisket with my cheap Shun knife it is like shaving.  I thought they were sharp when I bought them but they are at a much higher level now.  I have always been a Wusthof guy and still use them for routine kitchen tasks but correctly sharpened Shuns are in a whole different league.

  • The long rest does help find the right doneness…. Like playing beer pong with a cup at the right pull temp vs a bucket… way easier to get it right pulling at 190 and letting time and temp do the rest at 150
