Morning All:
After doing one of the onions the other day using Beef Better than Bullion, I thought maybe to try one with Chicken Better than Bullion as our side dish for tonight's dinner (Cuban sandwiches)...for the rub I used the Dizzy Pig Shakin' the Tree and plus some DP Mole rub...here is the onion ready to go on the Egg...
It roasted for about 40 minutes then I cut it up & added about a 1/3 cup of white wine...ready to come off the Egg after another 30 minutes or so...
For the Cuban sandwiches I had marinated two pork tenderloins in a Mojo sauce for about 24 hours, then grilled...
These tasted great...we then built the Cuban with sliced pork, deli ham, salami, dill pickle, Swiss cheese & mustard...here is my sandwich...
The onions were obviously less "beefy" tasting but still sweet & delicious...definitely a nice variation on the roasted onion theme (and a do-again!).
