OT - Japanese etiquette question (Ramen)

There's plenty of ramen content on ewetube, but I can't find an answer to this particular question.
Many styles of Ramen include a "char-siu", which is a rolled, sometimes cured/seasoned, and slow-roasted pork belly, which is then sliced into disks and one disk placed atop a bowl.
How are you supposed to eat it? It's too large for one bite like the meats in phó or chinese soups, you don't have a knife to cut it, it's not tender enough to tear, and lifting it with chopsticks to take a bite off it then dropping it back in the soup doesn't seem right (it's apparently improper to lift noodles up to your mouth and then bite them off, letting the rest drop back into the bowl).

It's ok to bite your noodles, while still holding them with your chopsticks, and then to dip them back into the broth to continue slurping. It's bad form to just let the noodles drop back in the broth.
It's ok to bite a big hunk of whatever and then also dip it back into the broth, just don't bite a thing and let it drop from your mouth and splash into the broth.
