Mole Baby Backs

My wife made a mole Monday night for another purpose. There were leftovers and I knew I wanted to smoke some ribs this week, So, last night I made some mole ribs.
I found a recipe online for a guideline. The rub was chipolte powder, ancho powder, coffee beans, turbinado sugar and black pepper ground fine in a spice grinder. I applied he rub Wednesday night.
The recipe wanted me to do a 2-1 and a 1/2-1 cook. But I was worried that the ribs would be fall off the bone which is not my preference. So I went 3-1-1 (but it took an additional 30 minutes.
I've never foiled ribs before but did this time, adding ACV and some smoked honey that my wife smoked last weekend.
Basted with the mole the last hour unwrapped.
Final assesment: I loved the flavor but wan't happy with the texture. They were not "mushy" but they we not quite the slight tug I usually get.
I'll do the rub/mole again but go straight unwrapped until the finish.
I had nothing better to do yesterday anyway.
