cooking meat over vegetables in drip pan

I think I remember a thread that cooked vegetables in a drip pan under the meat which was chicken. But I cannot find it. Have any of you tried this and did it work good and if so what vegetables to use??? And what meats did you cook?

I roast small potatoes and garlic under chicken then I smash the potatoes. Sometimes the potatoes need a few mins in the microwave to finish cooking them so they smash.

I have a few kids who LOVE potatoes this way. Even if it is not in the plan for dinner I will still put a 9x13 underneath the chicken to catch the drippings with potatoes and onions in there.Large, Medium, MiniMax, 36" Blackstone
