    In a nut shell, I've been telling folks for many years.....if you want to render it, roast it or slightly protect it, go up with radiating (direct) heat. What's up, felt line or higher. I prefer to go as high as I can => gives me a wider margin of error, cook hotter with less chance of burning it.....
