Beef Ribs On A Stormy Day
Yesterday the forecast was calling for 8-12" of snow. Those totals did materialize to the west of me, my area ended up with about an inch of freezing rain/ice, that changed to a dusting of snow later in the evening. It was pretty...
The Egg was glazing over with ice and looked cold. As a preventive measure against it freezing up I decided to cook a rack of ribs...
All warmed up and on they go. They sat in the fridge 4-5 hours with some SPG, then a light coat of Red Eye Express right before they hit the Egg...
Ready after about 5.5 hours at 260ish. I forgot to remove the jalapeno that was to be roasted, ended up dehydrating it...
Served up with coleslaw and some leftover mac-n-cheese...
For some reason I get extra satisfaction from Egging in inclement weather.
