When using Joe tissorie or bge Rotisserie, do you leave the lid open during the cook?

    I typically close it. I also bank the coal to the back of the egg to help keep the fat from dripping on the coals

    I made a split divider and close the lid.  But today I watched a guy do a leg of lamb lid open.  Came out great.  Just was curious

    Leaving it open will get the color you want on the outside while minimally cooking the interior.  For a leg of lamb or large bird, I'd leave it open until you like the color, then close it to finish it off.  

    That's my advice for a gas rotisserie. Haven't use a BGE one yet.
