Go to paella proteins and veggies

Curious what everyone's go to paella proteins and veggies are. I tend to mix it up each time. Doing one tonight and looking for some inspiration. I tend to go seafood heavy though I do have a good chicken thigh/artichoke one I do.

    I have concluded that paella should be treated like pizza.  Use the best rice you can find (Bomba for the win-like the right dough) and then have at it.  That said, favorite proteins are seafood heavy, default to shrimp, scallops and chunks of a decent white fish.  I will also go with chix, sausage (two or so different flavours (nod).  I occasionally toss in already cooked chunks of pork belly and coarsely chopped brisket flat.  I will use any protein in the left-over category.  Been known to use crumbled bits of chorizo  that once browned will mix in with the rice before adding the liquid. (Breaking a few rules here?)
    On the veggie side, asparagus (don't like the green beans or peas), deveined and deseeded sliced jalapenos, red or orange peppers and artichoke hearts are stable participants.
    Fun cook and the all-in-one dish makes serving easy.  FWIW-
