I wanted to make chicken ballotine but poor planning on my end… the local farm where I typically purchase my birds and the butcher shop were both closed yesterday so I ended up going to the grocery store. I could not find a decent bird there so I ended up just getting breasts (the whole back) that I deboned myself.
Well, stuffing just the breasts is not as easy as stuffing a whole bird!
Chicken breast, honey garlic sausage with maple sugar flakes, and traditional stuffing (all wrapped in bacon):

With flu and cold running in multiple households we settled for covid-like remote Thanksgiving celebration ☹
The raws:
Turkey breast(simple brine injected and air dried two nights in fridge) and leg roulades ready for sv
Heritage pork 'baby' backs weighing in at just 1.25lb per rack
Low and slow 250 till IT 145, crisped up skin in kitchen box at 475
SV 151 for 5.5hrs, CI pan seared
Egged at 250, approximately 2.5-1-.75
Roasted cauliflower
Maple roasted brussel sprouts with bacon
Served with tater mash, gravy from carcass stock and fresh cranberry sauce.canuckland -

My son and his wife (live in Ottawa) went to Loblaw’s on Saturday and were surprised to find no birds available (he is definitely a “why do today what you can put off until tomorrow” kind of person). So they settled for a frozen Butterball breast and he found an InstaPot recipe where he said they breast goes in frozen. He said it came out great, but he didn’t send along any pictures for proof. 😎

Threw it on the Egg at 350 from frozen (rubbed a little evoo) and it turned out great for our family of four (+ daughters bf) Thanksgiving dinner!
SWMBO added a great spread of mashed pototoes, stuffing, gravey and corn.
I didn't take pictures either so it probably didn't happen... but I have happy memories! These kids grow up way too fast!!St Marys, Ontario, Canada LBGE
