Agreed, crazy that almost 9,000 lbs of brisket only lasts them 3 days.

Have not but they are ranked #8 on this past year's Texas Monthly Top 50 BBQ places in the state (just behind Franklins and ahead of Snow's). I cannot comment on the judging criteria as I only eat the lean and fatty brisket thus the whole tray is outside my scope.  That said, I have had brisket at the #2, 4, 5, 7, and 9 places on the Top Fifty.  The brisket at all has reached what I consider the upper limit plateau of greatness.
The good pit masters have crafted it to the point where the differences are in the palate of the consumer.  So, go forth and wrestle with the cow (always remember who drives the cook!) as you will do very well along with being your own harshest critic.
Those who get to enjoy it will think it is great and rightfully so.

This is just outside of Lubbock.  I was supposed to go when it was just a trailer (kids were at TTU) and maybe just a year or so old but didn’t make it.  I’m sure it’s good, but that area doesn’t have much good bbq for some reason, so when he dropped on the scene he got a lot of hype.
    Love you bro!
  • Live in Midland here.  Just south of Lubbock.  I have friends who live there and say it is really really good.  I haven't made the trek there to give it a try yet.

For the relative locals ( figuring distances in Texas) you always figure you will "get to it" but the "it" usually requires a push from an out of state visitor to get it done. So, don't always think there is tomorrow as sometimes that opportunity evaporates.
From someone guilty of the above (not in TX) and had to scramble to salvage a bit of the "always get to it mindset.)"  FWIW-
