Easy weeknight standbys

My wife requested chicken gyros tonight.  It’s an easy, tasty meal that’s relatively healthy.  I just marinate chicken thighs in Kraft Greek dressing. Homemade tzatziki sauce made with greek yogurt, cucumbers, lemon juice, S&P and garlic.  The greek salad is just roma tomatoes, cucumbers, a tiny bit of chopped yellow onions greek dressing and some feta cheese.  I grill the pita bread (bought from a Greek booth at the farmers market) for a minute each side to warm it up.  From start to finish is about an hour.  

Curious to know what everyone else has in their regular rotation.  Any easy weeknight dishes you rely on?

    Grilled (whole) chicken takes an hour.  Lentils in the Instant Pot.  Quick jambalaya or risotto with whatever's in the fridge.  Pasta (cacio e pepe, or tomato based, or alfredo style).  Chicken tikka masala.  Enchiladas (meat based, or sweet potato/black bean).  Cauliflower - either roasted or as a puree.  Seared tuna steak is super fast.  Also, baked salmon or a white fish.

    All can be quick or longer depending on the details.
