Love those beef ribs (again)...

Morning All:
Did another slab of beef ribs for dinner Saturday evening...just on the Egg indirect with some hickory for smoke & dome temp about 200...
Dome temp did climb to about 275 & they ended up going just under 4.5 hours (internal temps were 200 to 203)...ready to come off...
Sliced into "servings" & added a baked sweet tator for the side dish...these were Eggcellent!

Boom! Saved an extra 10% being a prime member so were $7.19 per lb. Unsure if that is a good deal or not but it doesn’t matter looking at this big ole slab of beef. Can’t wait to smoke them in the near future.

So, was the cow on food stamps prior to butchering, or did they kill him kindly?
I would be afraid of buying those ribs only to get them home to find out they were plant based.

According to the Whole Foods website they state: “Our Animal Welfare Certified chicken, turkey, beef, lamb and pork is raised with no antibiotics — ever — and no added hormones.”
I’ve never purchased any of their meats before but with their strategic marketing they got me this time. They looked pretty good before he wrapped them up. Let ya know how they turn out.

It just means the animal lived a good life while it was around (pasture time etc.). Probably the biggest positive of those types of programs is it pushes some business to the smaller family farms that can’t compete with the big operations on a pure price per pound basis. Theoretically, a less stressed pasture fed animal should have some benefits in the resulting beef flavor as well.

Turned out freakin fantastic! About 5 1/2 hr cook and bones just slid out with ease. Will definitely do this cook again! Very simple.

Rack of beef ribs stepping into the heat is one of fav bbq pics. I liken it to the days when you're going on your 3rd date and they've just stepped into the car. Looking forward to follow-up pics @bbracey21 🙂

Well had to climb aboard the Rib Roller Coaster. Did 2 racks of Beef Chuck Ribs in the PKO vice one of my ceramics.

Our local store had boneless short ribs on sale. Smoked these over Rockwood and some thick grapevines yesterday. 3 hours over the smoke and then another 3 hours in the drip pan with onions, wine and some dopplebock. Served over polenta alongside a Napa Malbec.
