Ok, slice the potatoes thin, fry some diced onion, take it out of the pan and then fry some bacon. Mix the bacon and onion then layer the spuds, layer of potatoes some onion and bacon - repeat. I did 3 layers topped with more potatoes. Add some chicken broth, cover and simmer unit till tender. Top with cheese, I used dubliner cheddar and Gruyère - into the oven until most of the liquid is gone and the cheese is starting to brown nicely
