A Day In The Life Of Texas' #1 BBQ Joint

This was posted to YouTube about a week ago.  It's 30 minutes long, but I thought it was worth watching and a cool "behind the scenes" look at Goldee's BBQ.  They all look so young....or I'm getting old?  Nah, they're young!   :)

    I have never had Goldees. Good to see new blood at the top but I gotta say it's getting to the point where they all feel like they are ripoffs of each other. They all worked for Franklin. Very few people doing anything different. Everyone uses the old lunch trays, same sides, same "sold out" signs in butcher paper. Same hole in the wall aesthetic. 

    Don't get me wrong I know I'm blessed to be in Texas for all our BBQ but just wish someone would do it a little different. Ive thought about it but the upfront costs to do it right are prohibitive currently. I guess that's why it all feels the same to me. You even heard their pitmaster say "when they get a good cook you either offer them ownership or they walk" problem is they go and do the same thing

    I kinda agree. I'm bored with that style BBQ. I'm far more interested these days in open fire grilling. Frances Mallman type stuff.

    Ya me 2. That's probably going to be my next big purchase a table top Santa Maria style grill. I'm really suprised though that we aren't seeing more Texmex traditional bbq fusions here. Valentina's does it somewhat but to
    me that would be a no brainer hit if someone could do it right.

    If you get the chance, check out Burnt Bean in Seguin, TX. Really, really good.

    On a marginally related note I have in their queue since late June a LoneStar Santa Maria Grill linked here https://lonestargrillz.com/  48x30 with a few options as this is the last of the Q rabbit hole toys I will acquire.  Delivery expected in around another month.  
    I have watched a fair amount of Mallman's videos and do have his book "Seven Fires." 
    How this all evolved over decades-from charcoal briquettes (Weber Kettle(s)), to the BGE and lump to an off-set stick burner and now the live fire deal.  
    No comment on how I got here but longevity and pursuit of new frontiers played heavily is this experience.  FWIW-
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.
