Ramos potatoes are back in season in the UK, they do make the most amazing chips. Or, given the probable audience, fries :). SWMBO cooked up her amazing madeira and mushroom sauce to pair with some grass fed sirloin steaks, the aforementioned chips / fries, some mixed vegetables and a complimentary bottle of 2009 Bordeaux. The sauce really is superb, recipe below:

and with the sauce adorning the steak:

Thanks for looking and have a great weekend! Tomorrow - Indian spiced ribs.

Was heavy cream used in the sauce?

  • Thanks folks.

@loco_engr it was double cream, which I believe (from a quick visit to the good folks at Google Inc.) is heavy cream in the USA. I put a link to the recipe in the opening post.

Sorry, I can't see the "proper chips" because the French Fries are in the way.

    Nice looking Steak and Fries!

@CPFC1905 @Eoin @TheToast  If you can get hold of them, Ramos do make the most amazing chips / fries. They aren't normally available in supermarkets, but most fish n chip shops use Ramos when they are in season. I get a 2.5-3kg bag of them from our local chippy for £1.
