Egg genius

Just bought an egg genius. Haven’t used it yet but plan on smoking a whole chicken and want to start out slow and low to smoke chicken then finish at a higher temp. So if i start at 220 for first 45 mins or so and then crank to 400 til it gets to 165. Will the rise in temp cause acrid smoke from more air being pushed into the egg from the genius?

    No, it won't cause acrid smoke unless you have chicken fat dripping on your coals.  If your coals are making clean smoke before you put your meat on, changing the temp won't bring more acrid smoke.

    I would pull the genius after you are done smoking.  They really aren't meant to control at 400.  Pull it out, and open the vents.

    I am curious if you will go indirect for the low and slow part, and then direct to finish?  Getting the plate setter out will have the dome open, so your fire will get some extra oxygen.  Just pull the genius at that point.
