Chicken Parmesan / Monterey Jack

This started out as Chicken Parmesan, but ran out of Parmesan so top it up with some shredded Monterey Jack Jalapeno.
Egg Bath : Egg, 1 Tbsp water, 2 tsp olive oil
Panko Mix : Panko (of course), Parmesan and Monterey Jack , fresh parsley, dried oregano and pepper.
Chicken to Egg Batch to Panko Mix.

On the Large Egg

Done, did not get the colour I wanted but it was good for a first try at the recipe.

Added some of the darker bread crumbs to the top.

Look lost on a plate with a BIG salad.

I usually cook breaded chicken inside, but was too nice outside to stay inside.
Tasted great. The salad was great also. with lettuce from our garden and homemade croutons.
Next time I will skip the pan and just put it on the grate. Will also butterfly the chicken like I usually do which results in more even cooking.

Looks great. Hard to beat that cheese combo. I have that same pan and use it often - especially on the Mini Max. Do you also have the lid that pushes the food down against the fan?
