Onions at a Texas BBQ Restaurant

Do the best places serve raw, white onions alongside their meat or something else?  TIA

    Yes. Raw, sliced onions. Pickles, too.

    They do serve raw, but I prefer pickled red onions as the vinegar helps cut the fat of the BBQ.

    Reminds me of the craze on the forum years back of putting unsweetened cherry KoolAide in jars of pickles for a month or so. Other than their becoming red pickles there wasn't that much of a taste difference and the fad died after the end of the summer.

    My mom before me….and to this day I smother my BBQ Chicken with onions as it slow cooks in the egg or oven. I slather sauce on both. I usually loose a few to the coals, so start with more than my desired finish. Vidailas for the win.

    One of my mom's only good meals was chicken legs finished in sauce and onions and foil.  I can't replicate it

    Interesting thread.  I have traveled on business extensively to Dallas, Tennessee, Alabama, North Carolina, Georgia and many more. Always get BBQ when I go there, and I have never had any BBQ smothered in onions or as a side. I am with Ezra and others on the pickles, slaw , etc.

    One of the best bites on Earth is a slice of brisket with a few slices of pickles and onion on Wonder bread w/ just a slight bit of BBQ sauce.

  • All bbq down here comes with, or is at least offered with, raw white onion, crinkle cut pickles, and often picked jalapeño (whole or slices).  

    I much prefer red picked onions but those are not standard fare at most places.

    Valentina's Real Deal Holyfield is at the top of my list.  That is the perfect combination.
    Fried egg, potatoes, bacon, refried beans, salsa and brisket on a tortilla-top that one!

    I know what you mean with the bold savory sauce definitely pairs better than the super sweet stuff used on rubs frequently. Spot on.
