Wooden chicken fix?

Love that rosemary garlic lemon chicken recipe I got on here but lately all grades of the store brand chicken breasts around here have been saturated with “wooden” chicken. The only quick solution I’ve found is getting the Bell & Evans which is sometimes hard to find and limited to certain size packs. This got me thinking is there any way  to get rid of that texture from wooden chicken? Take the meat hammer to it? Marinate it for a day or so?

    Woody chicken - mainly seen in the breasts. Guessing its due to commercial breeders growing too quickly. Almost looks like white marbling in a chicken breast. It's been widely publicized the past few years.

    The arrogant answer is to just buy better chicken from local farms. But as a fix, when the wife comes home with less that stellar looking birds I resort to beating them thin with a rolling pin and marinating for a good 12 hours or so. That seems to do the trick.

    I rarely buy chicken breasts anymore. Thighs get a constant rotation around here.

    I’ve always wondered if that’s what it was too. First time I ever experienced it was with a Wendy’s spicy chicken sando about 20 years ago. Now it’s everywhere.

    Weird. I appreciate your thriftiness don’t let it go to waste. Especially with uncle joe calling for food shortages.
