OT: Beef Bones in an instant pot

good idea for boosting a beef broth flavor based recipe (pepper steak)?

    Cast iron skillet. 
    Oil
    Garlic
    Onions 
    Sear all sides of bones
    Once everything melds nicely, you can make your stock with everything in the skillet.

    Once everything melds nicely, you can make your stock with everything in the skillet. 
    That or do the same as above in a baking sheet.  It helps with the color/flavor of the broth but also with “impurities”.  Some people actually boil the bones first to get rid of them and then roast; I personally just roast them.

    I rinse off the bones, then put in a pot of cold water.  Bring to a boil, then drain.  Rinse out the pot and the bones with cold water. Then do whatever you want to do with them. 

    The scum that comes off the bones has a horrible taste and it sticks to everything like a ring on a bathtub.

    That is part of the time-honored tradition of preparing pho broth. 
    Great call @nolaegghead, but I’m wondering how many syllables in the word pho?
