Super Bowl Burnt Ends two ways

I have done the Pork Belly Burnt ends a few times, always come out fine but since Im not a huge bacon fan I usually make them for a party and let others eat.  So since I had a Pork Butt in the freezer I thought lets try it with that instead, plus I saw an eeeek... TikTok about Hot Dog Burnt Ends so I thought WTH its the super bowl lets go.

So these to me mind you were much better than Pork Belly, tasted like a crispy/ juicy pork steak.  However I think I was light on the BBQ sauce and some got really stuck to the pan and a bit crispy.


For me though this was an interesting finish.  I dont mind a hot dog every so often but I usually go with Kruat or a Chicago style so just eating a piece of dog was going to be interesting.  I cooked them exactly the same as above (used a mustard primer to get the rub to stick) but only an hour in smoke and only 30 min the braise.  And the first bite and chew was really good but in the end it was still a hot dog but definitely something fun to bring to the party- better than cocktail weenies in a sauce.

I saw that exact tiktok you mentioned.  Was wondering if someone was going to try it.  I am going to have to try the burnt ends with a pork but.  I wasn't happy with the last pork belly burnt ends I made.
