Pineapple Coconut Shrimp...

Morning All:

The much better half has been wanting to try this recipe for a while & we finally got around to it today...the shrimp are marinated in a mixture of coconut milk, orange juice, lime juice, soy sauce & tabasco (we used the Chipotle version) for just over an hour...put the shrimp & fresh pineapple chunks on skewers & grilled direct at about 400...also added some Dizzy Pig Pineapple Head rub...just on the Egg...


A few minutes later off the skewers & onto some Zatarain's Caribbean Rice topped with some chopped fresh cilantro...


Will definitely do this again!
