Potatoes

I am planning on doing the Maple Bourbon ham in a couple of weeks. I remember reading about cooking potatoes under the ham and letting the ham juices run down in the potatoes.  I haven't been able to find how long to leave the potatoes under the ham.  I realize I can use about any potatoe recipe. I'm more looking for time and technique. Thanks.

    I do potatoes under spatch chicken frequently.  I leave them for the entire cook.  

    Reason number 1: I'm lazy
    Reason number 2: my kids eat all of anything that comes off the egg. 

    I have taken these taters and whipped them up in the Kitchen Aid when feeling somewhat energetic.

    Potatoes are done when you can pierce them all the way through (check the largest potato).  That's usually between 1 and 2 hours depending on the temp and the size of potato.

    That said, you can overcook a baked potato for another hour after it's done and it doesn't hurt quality.  In fact, some people purposefully overcook them because they like the result. 

    I would cut a single slit across the potato on one side long-ways, maybe 80% through.  It will catch some drippings and give the steam a way out.
