Turkey Legs

Options
One of the fun things to do at our State Fair is watch the people walking around eating the Fred Flintstone turkey legs - which has me wanting to try some.  I picked up a couple frozen ones.  I was thinking of trying the JoeTisserie, but am open to any suggestions.

    I wanted to do some of those a few years back before I had a BGE but couldn’t find them. I settled for a dozen regular sized ones as they were all I could find.

    I smoked them on a cheap propane fired metal box from Gander Mountain. They got good reviews.

    I went to wurstfest yesterday, they smoke legs on a southern pride smoker, then crisp the skin over a pit. 

    I don’t know what temp they go to on the smoker before going on the fire pit to crisp, but I’d imagine it’s like dark meat chicken - go to 185 IT.

    It’s in New Braunfels Texas , just north of San Antonio. It’s worth a trip, lots of motorcycles in the hill country roads.

    If you haven't, try 165F. Its pretty damn good.
