Green Egg Chili

Made Chili in a Lodge Cast Iron Dutch Oven that was prepped and put onto the Egg.  Used 2lbs of ground beef (homegrown steer), 1lb of Jimmy Dean ground sausage, cut up and sauteed' onions and bell peppers, Bush's Medium Chili Beans (2 cans), one small can of original Rotel, one can of diced Tomatoes with Green Chili's, and Chili Powder and Cumin to taste.  After all ingredients were prepped they were put in the Dutch Oven and put onto the Egg which was already hot and primed with chunks of previously soaked Mesquite chunks.  Allowed the chili to cook over the fire (sitting on the grill rack only) and cut the heat down to around 300 degrees.  Closed the lid and let it cook and absorb the mesquite and charcoal smoke.  Stirred occasionally to keep the bottom from burning.  Finally shut the Egg down and let the Chili sit in the Egg for about 30 minutes, pulled it off and let it rest.  Served with cheese, Fritos and sour cream.  The Egg did an outstanding job cooking and flavoring the chili.  Looking forward to cooking Chili on the Egg again!
