Thinking about cooking indirect heat at 375 but for how long? They are very small, half a pound each.

Why not hot and fast? I would do raised direct, just like chicken.

I'd go hot 'n fast... get some good color on the bottom then finish off raised-direct, preferably in a skillet (just put the skillet directly on the grate) frequently basting with garlic/herb butter.
That's my method with game hens...
