Hatch Chile Season 2021: Smashburgers

My shipment of Hatch chiles arrived yesterday so I set out to roast them.

I got 10lbs of medium delivered 2 day fedex. All the chiles arrived in great shape.






Steam them a bit to loosen the skins. If you do it right, the skins come right off. Cook them a bit too long and the flesh under the skin starts to break down and get sticky.

Today I made hokkaido milk buns and smashburgers with green chiles.

    I'm surprised you can't find them locally.  We even see them here in flyover country.  Earlier this year than the past few but they were available at most grocery stores for a good two + weeks in mid August.  
    Regardless, however you get and enjoy them is all that matters.  
    Stay healthy and safe out there.

    Have found them locally but with really wide ranges of heat to the chiles. I buy frozen ones from them in off season.

    Okay-it's Saturday night and I'm just messing here but I believe you are the initiator of the 24 habanero pepper salsa thread and follow on cooks.  Thus the concern about heat??   =)
    Your off-season source? Last year I had to grab frozen ones from the Hatch Chili Store as my covid driven consumption rate far exceeded my fall roasting quantities.  TIA-

    I will eat spicy, yes. But that’s a lotta peppers for one dude and I cook for the whole family.

    @dmourati ,  I found some hatch peppers at the local grocery, and your burgers looked so good, I wanted to try it.  No where near as picture-perfect presentation as yours, but they were very good. Thanks for the inspiration!

    Awesome! Glad you liked the chiles.

    I cheat on my photos and use "portrait mode" on my iphone 12. It does a nice job blurring out the background and makes the photos look more interesting.
