Melitzanokeftedes: Eggplant Fritters

I cook almost exclusively meat on the BGE. Sure sometimes I'll add a veggie or two, and I made the Ultimate Peach Cobbler two or three times this month but really, I'm mostly a meat eater and cook.
To my surprise, a intriguing recipe caught my eye and I decided to make it for dinner tonight. It's a Greek dish called Melitzanokeftedes, eggplant fritters or "eggplant meatballs." I'm Greek, I've eaten tons of Greek food, but I don't recall ever eating Melitzanokeftedes. Regular keftedes, sure. Tons. I have very fond memories of eating those with my Grandfather in Greece. But never an eggplant version.

Pretty standard, two eggplants.

Chop the tops, score them EVOO, S&P.

Flesh side down, 350F or so for about 30 minutes.

With any luck, yours will look like these.

Add a bunch more ingredients, make into patties, fry in more EVOO and serve with Tzatziki.
We had baked potatoes and grilled corn to round it out.

Definitely making this! Grilled and then fried aubergine is aleays good.

Gave this a go with some mods to make it vegan. Nice fritters. Did a sweet chilli dip to go with the as well.

Going from meat->vegetarian for this dish was a big change for me. I also used gluten free breadcrumbs as I'm GF as well.Plymouth, MN
