Brisket Done Too Early

I have an 11lb brisket I did overnight at 225. I was thinking it would go until just after noon for a midday late lunch or early dinner but it is going to be done around 9am. What is best option from here?
1. Foil and keep warm in oven at 140 for several hours OR
2. Foil and towel in cooler for several hours?
Lastly, does that count as the rest or do I need to rest it uncovered before and/or after holding it?
TIA

Let it rest before wrapping/FTC. If you stash it away right off the smoker you are guaranteed overcooked brisket.I would hold it in a cooler with towels. I’ve held brisket for 8 hours before in a Cambro and it was fine. Not need to rest come serving time~ John - Formerly known as ColtsFan - https://www.instagram.com/hoosier_egger

Thanks. Rest an hour? Did you preheat the cooler with hot water?

I never have messed with preheating. Some people use hot towels in the cooler to help. I’d hold it for a couple hours if you can~ John - Formerly known as ColtsFan - https://www.instagram.com/hoosier_egger

Man Id say this brisket is done right on time if you’re looking for an early dinner. Let it rest on wire rack for about a half hour, then tightly wrap in foil and then towels and into a cooler. Should be good for at least 6 hours maybe even more. I don’t think it’s necessary to preheat the cooler either.

@tdub4 I just re-read your question. Let it rest 30 min or so like above before stashing away~ John - Formerly known as ColtsFan - https://www.instagram.com/hoosier_egger
