Smoked skirt steak?

I saw this recipe for smoked skirt steak fajitas, and I’m presently marinating for tonight -

But I am worried about smoking skirt steak for an hour at 250 - am I going to get shoe leather? I would have thought 15 min or so, and then a sear to finish. Any ideas?

I can’t see a smoke session being worth the trouble for this cut. Hot and fast for a skirt gives great taste and tenderness. I would also advise against the 8hr soak in the marinade that has that much lime juice on a thinner cut like skirt. It will totally start to cook the meat and make the texture somewhat mushy. Really an hour or 2 is all you need imho.-----------------------------------------analyze adapt overcome2008 -Large BGE. 2013- Small BGE and 2015 - Mini. Henderson, Ky.

it has to be said that it came good, but only just. Gave it 20 minutes of mesquite smoking, and then a very quick sear. Not mushy, but certainly not worth the effort.
