Ended up dry brining the steak with lanes dry brine for a day or so, and then used my anova precision oven in Sous vide mode to 120, and then about 2 minutes per side at around 600-650 on the mini max. Finished with a garlic and fresh herbs compound butter and a sprinkle of Maldons flaked salt.
