When you wrap a brisket, butt or ribs in foil is it normal for the dome thermo to go up?

The dome temp will initially rise due to the shot of fresh air when the dome is opened to foil the protein.  It can settle at a higher temperature after the dome is closed due to the reduction in the energy absorption of the now foiled heat sink.  FWIW-
Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    I concur.

Like a fire blanket, it will reflect radiant heat away from the food (heat sink), thus raising the temp (unless you have a stoker in which case you will just burn less fuel).
