I am looking to bake Old World artizen Bread
First - any tips 
and
Do you have suggestions for Egg set up for bread - to create even heat - etc

    Use a Dutch oven and pre-heat it. I describe a dough recipe and this technique in this blog post:

    Large BGE and MMX, both with platesetter and cast iron grid. Superpeel for pizza, iDevice for temperature.
    Cooking on the large in deepest, darkest England since Oct 2015. MMX added to the family Mar 2016.
