Also my wedding anniversary. Going to a great Mexican restaurant with my bride and 2 of 3 children to celebrate. The other is out of state in college. 26 years and counting. Happy National Burrito Day and Happy Easter to all.

I made a breakfast burrito - three slices of crisp bacon, two scrambled eggs with onion and green pepper, and some grated cheddar cheese.  I topped it with salsa!  

It is a protein-packed start to the day!

I don’t know if it’s actually a thing but I went all in when I saw this in the morning 3/3 burrito meals.  Carne asada and potatoes for breakfast.  Shredded chicken with peppers and onions in a red sauce for lunch.  Sweet pork smothered for dinner.  My wife thinks I’m nuts.  Congrats on the anniversary!

Above is a burrito grande for my son.  
Next is my steak fajitas al diablo. 
Below that is my wife's shrimp al diablo. 
Finally my daughters carnitas chimichanga.
2 pitchers of lime margaritas rounded out the meal.  Awesome meal and company. Wish I could cook Mexican like them.
