Couple of Chops

Did two bone-in center cut pork chops I rubbed with Dizzy Dust, indirect at 250°F for almost two hours and then gave them a nice sear in a cast iron on my stove. Turned out juicy and flavorful. Had a drip pan filled with water and added hickory chips after my egg was hot.
Finished with flaky sea salt, of course. Was delicious! Some of it just pulled apart.
