Yardbird - 2 Ways

I promised a buddy a beer can chicken.  My wife arrived home with two birds.  One solution:  beer can in the medium, spatchcock in the large.  She sometimes complains about chicken on the Egg - too tender and juicy for her.  Seriously.  She prefers hers a little more well done.  Oh well, that's how me and the Eggs roll.

    Capt, was only able to enjoy the spatchcock.  So, so good.  I apply a liberal amount of rub, I want it to get through to the meat.

    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

    Done this before.  In fact, had a bake off one Thanksgiving: my spatchcock versus wife's oven baked.  She was gracious in defeat.

    It's too late for this cook, but spatchcock both next time. Drink the beer(s). Both you and the chicken will be better for it.
