Ketchup not just for breakfast anymore(?)

Just curious if any of you talented chefs have a favorite?

Is there a better bottle than the one that is on sale?

Are you truly gourmet and have developed a recipe that smoked, the ketchup we watch our children and grandchildren grab, and then apply copious amounts of the red condiment to complete the perfect peanut butter, bologna and Frito double stacked sandwiches? (Mother’s fault, obviously, leaving sliced bananas off is a crime, but that will need to go on another thread)

Please share your thoughts.

HEB in Texas started selling "Whataburger" ketchup and I like it.

Made a batch about two months back and it was a grand slam of a success. Bet you could kiss it with some cold smoke with interesting results.

    Just try it.

I buy aldi's organic house brand with no hfcs and lower sodium. Tastes like my former standard, Heinz. Doesn't really matter though as I only use it on fries. And I don't eat fries often.

As for "ketchup, peanut butter, bologna and Frito double stacked sandwiches with bananas", say it ain't so!

Ketchup has three legit uses and one non-legit but acceptable use.

    1. Condiment on hamburgers.
    2. Condiment on fries.
    3. Punchline for bad Pulp Fiction joke.

    4. Fake blood for low budget horror films by teens.

    All other uses are heresy.

hmmm - looks more like a relish than ketchup to me - especially with apple pieces in it.

But if you say it was good I wonder if a guy could just puree it so it could be squirted rather than spooned on.

I avoid Heinz at all costs.  Tried the organic from Wegmans, good but a little sweet.  Usually just do Hunts

Like every patriotic American I abhor ketchup on hot dogs.
Yet, for me it's a must on corn dogs.
Which I get a craving for, every 12 to 15 months, and I consume one of those big boxes; then I'm fine.
    In Heinz, only.
    Go figure.

I've pretty much eliminated ketchup as a condiment for bbq sauce over the years. Not intentionally but just kind of phased it out to the point where I caught flack for not having it on hand when others are over. Ketchup still has it places though.

I like to have a good laugh at the people who are ketchups snobs (“only on this, never on that”).

like arguing burger king vs macdonalds.

Both good. Nothing esoteric about either.

Although: I’d certainly listen to an informed opinion about why one shouldn’t have ketchup on a hot dog. But if your sentence begins with “my dad says..” I will have to pass.

Ketchup on scrambled eggs.  I love it, but my wife thinks it’s vile.

She puts ketchup on Chick Fil A sandwiches though, so clearly her tastebuds aren’t calibrated.

What one claims they don't like says as much about what they do like.  Ketchup starts out as a vile creation.  Tomatos thickened to a latex consistency through addition of corn syrup or some other sweetener.  Add some vinegar, salt and some nondescript spices and you checked off every taste sense box.

Thus it appeals on a base level if coupled with some cultural norms.  They put mayo on fries in Europe (or maybe I just made that up).

I almost mentioned the mayo on fries thing earlier. Yes, very common and quite delicious. This is the only way my wife eats fries. I take a hybrid approach - having a dollop of both mayo and ketchup next to my fries and dipping with a combination of both. The mayo adds the richness while the ketchup provides the tang and sweetness.

Yes. I would make a slight distinction, being unmixed, the separation between the two allows me to dip in one or both, and allows me to control the proportion of the mix.

In the Netherlands, there were French Fry stands that offered various sized portions with about a dozen different condiments. It seemed on that day, Ranch dressing, gruyére cheese, and sriracha/mayonnaise were the popular choices. You could mix the condiments together if you liked. I stood in a long line, to a very small storefront maybe 8’ wide, that was operated by two people. They made a killing at this spot. There were others like them close by, also with long lines. Might be an idea here for areas with a lot of foot traffic.

Anyone want to make their own ketchup? Here are two recipes, the first is just mix and stir, the second is cooked for a bit. Been a while, but istr the cooked one is a bit better, but not by much.

If you use either recipe, you have to promise NEVER to use them on hot dogs... Unless you are 12 years old or younger!

  • As a kid, we dunked our grilled cheese sammies in ketchup, it was Heinz, I'm sure.

Then as a yound adult on my first trip to New Orleans and my first time trying raw oysters, the restaurant had the fixins for cocktail sauce on the table to mix it up yourself:

    Ketchup
    Horseradish
    Lemon juice
    Worchestirshireshire sauce (however it's spelled)
    Tabasco

To this day, I keep all the ingredients on hand to make cocktail sauce in case we are serving oysters or Old Bay shrimp. I find the bottled cocktail sauces are just disgusting and waay too sweet.

These days I buy Trader Joe's organic ketchup without high fructose corn syrup or Annie's organic.

I have a bottle of this in the back of my cupboard.  It's the consistency/color of soy sauce, and there's mebbe a 1/16" amount of sediment on the bottom (its been up there awhile, and the seal is unbroken).
Guess I should try it one of these days.   :|

EDIT:  And I just read thru the Amazoid reviews; some equate it to warshyersister sauce, and others claim its much better.  Guess I need to grill up some burgers when my Masala-stew/rice leftovers peter out, and try this stuff.

@Botch Maybe you need to plan a dessert instead of burgers.  If I am reading the label correctly, it says "For Pies, Puddings and Sauces &c."
