Pork loin stuffed...

Morning All:

Had some friends over for dinner & did a stuffed/rolled pork loin...loin weighted just over 2.5#...I did a somewhat sloppy job of fileting the loin, but it worked...once flattened added a later of coconut, dried pineapple & pistachios along with Dizzy Pig Pineapple Head (we call this our Hawaiian Pork Loin)...ready to roll...


On the Egg initially direct at 350 to get a crust, then went indirect to finish to 140 internal...


After pulling from the Egg let it rest about 15 minutes...sliced & ready to eat...


Added rice & cole slaw for sides & for dessert a pineapple/blueberry crisp...on the Egg...


my bowl of the crisp...


It were gooooooood!
