I have my LG Egg in the hardwood table resting on the table nest. Will the air gap be sufficient to keep the wood shelf it rests on from burning if I do a high heat 'burn off'

I run in nests, so I have no experience here to share. But if it was me, I would put some sort of stone surface (paver, etc.) below the table nest as another layer of fire resistance.

If you have a table nest, the cross of 4 legs, you will be fine. I have same thing on granite. No issues.

I am building an outdoor kitchen and want to ask if an XL BGE can sit directly on firebrick without a nest

I personally used a paver, then sat the egg on the ceramic pads from years ago.....not sure if they’ve changed that up recently. I still wanted the air gap between the egg and the paver. Ive never had an issue.

The air gap is the most important thing. Additional paver, or better yet fire brick, provides additional protection.Southeast Florida - LBGE
In cooking, often we implement steps for which we have no explanations other than ‘that’s what everybody else does’ or ‘that’s what I have been told.’ Dare to think for yourself.
